The key is not be afraid of adding broccoli and carrots to your pasta dish.
I added a lot of onion, mushroom, as well.
I used small pieces of roasted chicken.

Korean Spicy Stir Fried Pork

This is probably one of the best dinners I've had in the last 2 months.

This is korean inspired meal. I shopped for asian ingredients at pak n save in Wanganui today.

Steps?
Here you go:
1. Chop half a kilo of non-fatty pork in to bit-sized pieces. Put in a stir-fry pan.
2. Add chopped capsicum, carrots, green pepper or jalapeno, ginger finely chopped, 1 piece onion, 3 cloves of garlic chopped
3. Add 2 tbsp brown sugar
4. Add 2 to 3 tbsp soy sauce
5. Add 2 tbsp sesame oil
6. Chili paste or tomato sauce
7. Shrimp sauce

Mix them all up and cook in high heat. Stir while cooking for 3 to 4 minutes until pork looks cooked.

Stop stirring for 2 minutes to allow to cook. Then stir again. Repeat 3x.

Start plating up with chopped celery leaves (fresh).

Plate up the pork then let it rest for less than a minute. Add sesame seeds and drizzle with sesame oil.

The aroma is amazing!
It took 20 minutes to prepare. I served it with basmati rice. I heard it would taste good with some misu soup.

How do you make a healthy dessert?

This is a bit of a stretch - I know. It's not exactly healthy. But who says I have to give up some good things in life like ice cream altogether?
Justification? :) I did a 30 minute walk around the park today. So I guess that makes me deserve some ice cream :-)

Just 1 scoop of ice cream plus all sorts of fruits. For my dessert bowl, I added:
1. Half banana
2. half nectarine
3. 3 big strawberries

Pan-fried Salmon and Side Dish

Yes! Loved the way I cooked this fish. Very healthy too!
My cooking tips for the fish:
1. Secret is to make sure the pan is really hot. Add olive oil, test with a pinch water and see if it sizzles. If so, place fish with the skin side on the pan.
2. Season with a bit of salt and pepper. Cook for 3 to 4 minutes at medium heat - each side.
3. Check if cooked then serve. The fish is pink in the inside and golden at the outside.
If the skin is peeling off, that's also a sign that it's ready.
4. Serve with wonderful side dish.

My side dish is simple stir-fried mixed of veggies:
1. Carrots and broccoli cut in small pieces
2. Peas and corn

Fruit Dinner with Toast

Had a pretty busy day and forgot about dinner - What's healthy and easy to make?

So I toasted a couple of slices of 9 grain bread, got an olive spread and to make the meal sumptuous and complete, vegemite.

Vegemite is my daily staple. I first had a taste of vegemite in 2007, didn't like it at first but I guess it's an acquired taste. I learned to love it and now I love breakfast so much more because of vegemite. In this case, as you can see, I even have it for dinner.

I cut up some fresh kiwi fruit, peach, banana and apple for dessert.

Home Made Potato Salad

Trying to have a healthy, filling and tasty alternative, I boiled some potatoes and mixed it with salad greens. I didn't add any cream or mayo at all. The creamy look is a simple home-made dip I made:
1. 1 avocado
2. 1/2 red capsicum
3. 1/4 regular sized onion
4. salt and pepper
